Cuban Mojo Roasted Turkey. Thanksgiving ain't got nothing on this. Absolutely the most delicious, moist Turkey you will ever have.  We use whole Turkey then carve it. Also used in the Ellena Ruiz Sandwich.

Similar in every way to Aroz con Pollo but substituting Shimp for the chicken and a touch of dry white wine. In Castros Cuba if you didn't live on the coast you did not get shrimp very often. This is the "peasant style". 

One of the great dishes of the Cuban culture.  A softly fragrant stew of ground beef, a sofrito of onions, garlic, tomatoes, with raisins added for sweetness and olives for salt. Versions of it exist across the Caribbean and into Latin America.

If you've ever had an American deep-fried steak, you will find Cuban breaded steaks to be a bit different. The popular bistec empanizado is marinated in Cuban mojo, coated in crushed crackers, and then pan-fried until golden.

The aroma of Chicken Fricasee is  intoxicating. Fragrant chicken and potaotes stewed in a tomato base sauce with olives, capers and raisens and Cuban seasonings. Be sure to have enough crusty bread to sop up the sauce.

In the Caribbean, Cuba is the most typically Spanish in background and cuisine. The major ingredients of this popular dish--rice, chicken, garlic, onions, and green peppers, olices--are all of Spanish origin. Still, a Cuban arroz con pollo is unmistakably Latin American.

Cuban mojo marinated, pan seared sirloin steak cooked on caramelized onions. This dish gets it's name from the preperation of "butterflying"  the sirloin steak before cooking. One of the most savory and delicious ways to cook a steak.

Get ready to dig into one of the most  traditional Cuban dishes.  ropa vieja- "Old Clothes" which is shredded pieces of flank steak in a tasty tomato based sauce- your palate will be begging ‘more please!’

As simple as it gets, morsels of pork marinated in Cuban Mojo, slow roasted with bitter oranges. Great as an appetizer but even better with some rice and beans... yum.

Tender lamb shanks in red wine sauce.  Similar to Osso Bucco in Italian cooking, this dish is a hearty dish. Loaded with Latin flavors, cumin, oregan, and garlic it is sure to please.

From the coastal areas of the island comes this tasty mix of shrimp and sweet tomato sofrito sauce, onions, garlic red & green peppers and adobo served over rice.

We roast all of our meat selections out doors in "La Caja China". Cooking time depends on quantities, no more than four hours. Exceptions are made for smaller "A la Carte" dinner parties where we use your kitchen and ovens to prepare smaller quantities, but we still utilize our Cuban recipes and cooking techniques.
