El Cubano Catering uses the classic Caja China to slow-roast a Whole Pig. This method produces tender, flavorful meat with perfectly crisp golden skin.
The Caja China roasting box cooks the pig evenly using indirect charcoal heat from above, sealing in moisture while creating the signature crispy exterior. Guests experience the roasting and live carving firsthand — a true cultural presentation, not just a meal.
